If it doesn't impact the budget or stop you from moving up a GPU tier, it's best to choose the top CPU you can afford. This way, you'll get the longest lifespan for future upgrades and potentially save money in the long run. Higher-end chips also tend to retain more value when sold secondhand. If you're working with a tighter budget, I wouldn't suggest an x3d chip.
The 9070/9070xt are excellent choices for value, and the price-to-performance ratio is notably stronger in your area right now.
64gb ram could be a good choice if this project is expected to last a long time. The Kingston Fury Beast I mentioned earlier is slightly taller than the clearance I observed on that cooler, but the difference was under 1mm, which should be easily manageable with the fan adjustment.
64gb version, if you still prefer RGB lighting.
From what I understand
1 Swedish krona equals 0.10 cents USD
Thus, you have 580 dollars 9070 XTs, 683.5 dollars 5070 Ti's, and 883.5 dollars 5080s at your disposal... These amounts seem quite low when compared to the US...
You use Danish Krone, my mistake. The exchange rate here is 1:0.15.
I made the changes now.
Will those RAMs fit in there? Or do I need to look for a 'lower' option?
I noticed they aren't white either.

The ram should work even better than the white RGB model, since it lacks that small upward point the RGB version has. Even if you had to lift the fan slightly, it shouldn't affect performance. If color isn't important, G-skill Flare-X is more affordable and less bulky compared to a ram with a heatsink.
