It's just hardware terminology for "model," but with shorter words and a more polished feel. The 9xx chips perform similarly to the 7xx chips in MSFS, yet they're pricier, making it seldom worthwhile. If prices match, then the issue is that the 7xx chip should have been more affordable.
I prefer the latest version, specifically the 9600X in the 7xxx lineup. It can be adjusted similarly to other models and will definitely perform better than the older generation. You don’t require X3D for gaming. I use MSFS 2020 on my setup.
