You don't have a documents folder on your C:\ drive. It has been moved to your secondary HDD, which holds the documents. Everything saved is directed to E:\. Your 1.) Local Disk (C

It's for a reason I emphasized this point. Perhaps underlining would help too. Your files remain on the **E:\** folder, but the **Documents** section no longer links properly.
