I currently own a Gigabyte Z170x Gaming 3 i5 6600k OC to 4.5ghz, Ripjaws 2x8gb at 2100mhz, MSI GTX 1060 with 6GB RAM, Samsung 860 Evo 500GB SSD, and a Western Digital 1TB HDD.
I’m considering an upgrade and was thinking about building the PC around a Ryzen 7 3700x.

Everything is fine. The Ryzen 5600X is a brand-new CPU and the original motherboard didn’t support it. Make sure you purchase a board that already has the BIOS update installed for the 5600X. Look for a label on the box indicating "Ryzen 5000 ready" or similar. Reach out to the seller for assistance. If the board isn’t updated and it was made before the Ryzen 5600 was released, you’ll need a BIOS update compatible with the B550 before installing...
I’m not sure if you’re working on 3D modeling or video editing, but I think we should allocate a bit more of that budget to a better GPU and a more balanced CPU. The Ryzen 5 3600x remains a solid CPU, and you might upgrade to a 2070 or a 2070 Super, which would make a noticeable difference in games. The requirements also depend on your monitor setup. I own a 1080ti with a 2700x display, which is similar to a 2070 or 2070 Super, and I often reach the GPU limit more than the CPU. If you can afford it, getting a new Ryzen 5600x would provide much greater performance for the same cost.
It would only be beneficial to have those extra cores for heavy multitasking, such as streaming and gaming with multiple apps open. The distinction between the two becomes difficult to notice in gaming contexts. If you check benchmarks for both, they are extremely similar.
Most often, a graphics card upgrade offers more noticeable gains than a CPU upgrade.

The single core performance improves significantly on the Ryzen 5000 series and there are further enhancements. Check out this video for more details. The 5600X is now very close to the 10700K, making AMD Ryzen 5000 impressive. FPS will likely increase even more with a GPU from the AMD 6000 series and the Ryzen 5000 CPU, especially with the Smart Access Memory boost. I struggle to locate a motherboard that doesn't cause issues with the R5 5600x, though some recommend Gigabyte B550 Aorous Elite or X570 models. However, these seem to encounter problems on PC Part Picker.
