It comes down to what you expect. With a 21:9 screen, you might feel let down if it isn’t available. The picture should match no matter which setup you use. Perhaps placing it on a 21:9 display would be ideal since those are usually top-tier screens.

Absolutely, yes. Not just that, but it's certainly a big part of it for me. Image dimensions in terms of pixels, yes, but as you say, quality-wise most 21:9 screens are fairly high up the scale. Not all, certainly, but most.
