Have you just updated your GeForce driver? Verify if auto-updates are enabled and identify your current driver version. Additionally, Assassins Creed Odyssey offers a vast open world. New regions may cause your FPS to drop into the 50s and 40s (rarely). This is normal.

I'm running on a 1700 with 3.8gb gtx970 and 16gb ram. Occasionally the CPU usage rises to 70% or higher, but no shutters are visible. Try disabling Denuvo, which many users have done successfully.

in my situation, there was no noticeable fps drop, I switched between mixed settings mid-high and some ultra, with v-sync averaging around 40-55fps. The drivers were updated last week (not using the latest one). Avg cpu usage was about 30-50%. This might be useful as a reference—just keep in mind this game isn’t heavily used.

Yes, what you're feeling is typical as long as frame rates drop in specific parts of the game. Move to a region with stable performance and keep playing for about five minutes. Does it become unresponsive there?
