You're selling your Asus ROG Strix Z370-F Gaming + i7 8700k. When Windows 10 installs, does the new owner have to enter the activation key? And if not, can they still view your account details when they start using Windows?

As long as the Windows license you bought is not OEM there is nothing to worry about.
When it's an OEM model, it's connected to the motherboard and isn't easily removable. However, I reached out to Windows support and successfully transferred a license by explaining that my previous laptop had stopped working.
You can delete the linking with your MS account. Once done, it doesn’t matter. They’ll have to log in to your account to view any related information. If you sell it without Windows, they should obtain a new key if necessary. Possessing the key doesn’t provide access to account details—it only enables Windows functionality. Mobo does not retain any account information.
