You should aim where the stick points. Just learn to handle multiple enemies at once. Use your signs to draw enemies out of position. Keep using Quen often. When you're completely surrounded, that's when you should retreat. If you're not surrounded, try another dodge. This is meant to be challenging, but mastering signs, dodges, and sword attacks makes the fight much smoother and more rewarding.
