You can adjust the window size independently from the resolution settings. Try resizing the Minecraft window to a larger area without changing its resolution, which should prevent the system from scaling it up to 1080p.

Actually, it's not that simple. When you're in full screen, you're using most of your display area, which means a smaller selection appears as it uses fewer pixels. This reduces the amount the system has to process.

You'll just have to upgrade or lower the settings significantly if the game can't cope. It's not very heavy, which is confusing since it seems it couldn't handle it.
