Run it for about 8 hours and see if it stays stable. If it fails, don’t worry—it means you’re not stable enough. Keep lowering the voltage until stability returns, then gradually increase it once you hit your target speed. This process might take several days to perfect.

For 8600K temperatures, I'd limit myself to: stock cooler 1.25v, smaller air coolers (120mm), 1.3v big air, 240-360mm AIO (1.35v), custom loop with 360mm radius (depends on your setup), and 1.4V+ sub zero—at which point you should probably run tests yourself.
