I tried to assemble everything myself, just the motherboard, CPU, PSU, case. Recently I saw a video explaining how a PC without an SSD and RAM can still read its LEDs and fans.

Ram along with the other parts is needed to post correctly. To start up properly, you also need at least one SSD or HDD for the OS to install. I've combined your topics, so let's stay on the same thread. Don't repost the same content.

I watched a video suggesting opening a PC without any CPU or RAM to check if LEDs would light up. It worked, but the LEDs didn’t activate and there was some smoke visible. Was that a sign of trouble?

The issue with the LED is likely irrelevant. Fumes are usually concerning.

Smoke means you either have a faulty component or (more likely, to be frank) you have connected a cable where it wasn't supposed to be connected and fried something.
