I’m using GTA 5 on PC with Skripthook v and car mods that enhance realism, like Zentorno for a Lamborghini Aventador. Will I face any issues if I go online? (I won’t use Skripthook, just the mods, which I can see.)

No need to take chances. Rockstar takes it hard without any regret. Whether it impacts the game or not, if you're running a script, you're likely to face consequences.
