He's not going to cap it... You could just use a single channel. Yes, you can skip the heat sink from the memory module. Just be super careful or you might damage the chips on the PCB. I like running the memory bare. It's simpler to cool it and it keeps things clean and low-profile. Edit. I should note this might void the warranty if you remove the heat sinks. Just a reminder.

Have you considered moving the front fan to the back of the rear heatsink? Is there space available on your rear IO for this adjustment?
