The 100Gbit connection appears as 100Gbps, but in practice it delivers only 10Gbps over an 8x link. The Connect X 3 MCX354A-FCBT cards we replaced previously performed well at 35-36Gbps on the same setup, so the slower speed here is affecting performance.
For professional use rather than a home setup, the cost of a high-performance motherboard shouldn’t be a major issue. If you require top speed, enterprise-level models are likely necessary.
