So about a month ago I installed a new 1080, and today I was experimenting with OC's. I was really surprised when I noticed I could move the slider all the way to the right end in MSI Afterburner on Memory clock. My GPU is running smoothly at 6000mhz memory (+1000mhz) and around 2080mhz core (+200mhz).

I’m not too familiar with PCs, but it seems like this could be a bug or just a really good piece of hardware. Just wanted to hear some thoughts on this.
It seems you initially won the silicon lottery. I would operate Heaven independently and keep an eye on temperatures. If everything remains within safe ranges, I'll give a thumbs up.
You've pushed the slider all the way, so 6000 mhz seems like your limit. With a boost speed of 2080 mhz, you're getting a solid card. I haven't overclocked my EVGA GTX 1080 ti Hybrid myself, but I increased the power limit to around 1967 using Nvidia GPU Boost, which is impressive. Since it's running on water, that suggests you have a good processor. I'm currently using a work PC, but I might be able to help you boost a bit more when I get home.
I really earned +300 on core but the temperatures were too high.
