ZFS and similar tools ignore memory type. Buffer chips may make lrdims a bit slower. Are you replacing an old system? What’s your average disk read speed? A 512GB drive or less should usually suffice for most tasks.
The 1GB per TB claim is questionable and varies with workload. Do you experience slowdowns with 128GB of RAM? If not, I’d keep it at 128GB. Plex suggests it’s likely not an IO-intensive task, and the usage tends to be sequential, so extra RAM probably won’t help unless performance problems arise.
