In the end dual and quad channel setups work alike but quad offers more bandwidth. However, it might be limited by the memory controller in the motherboard. I suggest sticking with the same previous configuration (two 16GB drives) and a 3600 MHz quad channel with 64 GB RAM is excellent for gaming.
I’d like a 2x32GB setup if it’s a brand-new PC, but since you already have 2x16GB, just purchase the identical package again and increase it to 4x16GB. Be sure to disable XMP/DOCP settings before installing the new drives, or it might cause issues. Also, why do you need 64GB?
