tesgeneral.com offers excellent suggestions for every kind of mod, though one standout is Requiem—it enhances Skyrim to feel more like classic RPGs and adds a tougher challenge.

still not sure about the top ten, but here are a few that inspired me to revisit quest mods—especially the unique and voiced ones. Immersive armor and weapons, enemy redesigns that add more challenge, and gameplay that’s moved from easy to tougher. Blood magic updates brought a lot of fresh spells. Land and area mods introduced new worlds to explore, all nicely crafted. Some just offered minor adjustments.

Cbbe and unpb were likely among the first mods I experimented with, but I switched back to unp for better compatibility with other mods I've used and personal preference. I tend to favor a more grounded build, avoiding overly heavy characters, though I should say the physics in cbbe are somewhat lacking.
