Just installing the mod isn't enough. To switch to Mod Organizer, you also need to install ENB's files in the Skyrim folder and that video probably included other mods too. The details are covered in the ENB description. Lastly, you'll never get a perfect 100% copy—Skyrim behaves that way.
ENBs are generally not included with NMM. The ENBseries files aren't permitted on the Nexus, so you should install the base for ENB separately. Have you reviewed the installation guide completely? You'll also need to modify the Skyrim.ini files.
You seem to be looking at something else than what I was expecting.
Usually I handle it by hand. Every task I completed needed manual setup. Just go through the entire installation guide on the Nexus site.
The documentation was reviewed for you. It may vary depending on the ENB.
ENB is a post-processing tool. It doesn't function like a typical "Skyrim mod" with standard file organization. It supports a wide range of games. The package you received contains an ENB preset for Skyrim, along with additional .dll and .ini files placed in the game's installation directory, often alongside the main executable. You can edit these settings yourself by opening the configuration file with a text editor.
