I put in that ENB but my game still doesn’t seem affected. I used NMM and completed the setup, too.

Just installing the mod isn't enough. To switch to Mod Organizer, you also need to install ENB's files in the Skyrim folder and that video probably included other mods too. The details are covered in the ENB description. Lastly, you'll never get a perfect 100% copy—Skyrim behaves that way.

ENBs are generally not included with NMM. The ENBseries files aren't permitted on the Nexus, so you should install the base for ENB separately. Have you reviewed the installation guide completely? You'll also need to modify the Skyrim.ini files.

Usually I handle it by hand. Every task I completed needed manual setup. Just go through the entire installation guide on the Nexus site.
