I'm a full-time streamer who loves PCs but I'm having trouble with encoding my specs—they're coming in lower than expected. Any tips would be great, and feel free to share screenshots if needed. You mentioned an Intel 13600k that's been undervolted for better cooling, running at 72% load with 32GB DDR4, XMP enabled, Intel Arc A770, ASUS ROG Strix B760-A, and a DeepCool LS520 SE. I'm also using a 240mm Lian Li PC-O11 with Dynamic EVO CORSAIR RM series 850W and want to stream at 1080p60. Any advice would really help! Thank you all so much.

Please specify the software and codec you're using for streaming, along with the platform you're broadcasting on. Also, confirm if you chose the GPU for encoding.

I only have two choices: quicksync h.264 at 1440p and I'm using OBS to stream to Twitch. The GPU isn't already set up.

In Task Manager do you notice two GPUs? If not, adjust your BIOS settings to maintain the processor’s integrated graphics active, even with a separate GPU installed. This should resolve the issue.
