I constructed the house in Falkreath some time ago. While using the method of striking my horse with a dull knife (iron dagger) to level it, I was ambushed by a housecarl. After a fierce fight—including heavy armor—I discovered on another forum that you could target her in the console and apply 'stopcombat' followed by 'setav aggression 0' to calm her down without saving earlier and losing your earned skills. Why did she suddenly turn aggressive? I was attacking my own horse, which is my housecarl. Shouldn't she attack anyone who attacks her?

There are various factors that could lead a Housecarl to attack you.
The first concern is the brawl bug, which has mods available to resolve.
The second issue relates to faction rules: your horse remains part of your faction until you switch to another. Attacking anyone in your faction may trigger hostility from other members. Use the spell "detect life" to identify if a Housecarl, horse, or follower is hostile. A red glow indicates hostility, and touching such a character will result in an attack.
Housecarls and followers will alert you if you act too aggressively. For continuous warnings, consider using a dialogue mod like RDO.
The third possibility involves items being stolen during bleedout while in a vulnerable state. This is unrelated to your current problem but may appear later.
Removing hostility without console commands is straightforward—simply pass through a load door.
