Some games need at least four cores to work properly. You should aim for a system with four cores or more. An i3 with two cores might appear as four cores and handle some games, but dual-core systems usually run them well. If a game isn’t demanding, it can run on one core. Most titles should work on a dual-core setup.

In general, four powerful cores work well for most games. A few titles can handle more cores, such as Overwatch, but they're highly optimized, shifting most processing to the GPU—perfect performance. I'm hoping for MMO games that offer similar efficiency soon.
