I wouldn't suggest it. I really enjoy using my Steam Link, especially when it's connected. Without a cable, it becomes too unstable and unreliable.

I was using Civ 6 via Steam Link recently. It had some weird dropped frames and compression issues, but it still ran. If you're not into turn-based games, you might not have much luck with this kind of problem.

I agree with djdwosk. It seems you're mixing internet and wifi concepts. The wifi on your local network would be much stronger. This doesn't guarantee a great experience; it depends on your coverage and speeds relative to your gaming PC and Steamlink. Also, the quality of gameplay over Steamlink varies by game type—shooter games tend to suffer more from lag.

It's best to avoid using steam-link on Wi-Fi. I tested it on a 150/150 connection, about 15 feet away, but streaming remained unstable and choppy.
