I bought an OEM key a few weeks back, but I'm about to reinstall Windows to tidy things up. I tried ThisIsW11 and the restore point didn’t help much. I’m just going for a clean install and want to be sure. Does this process erase the OEM key I used?

You can reset the same version of Windows multiple times on identical hardware. OEM licenses apply per device, not per setup. You likely won’t have to re-enter the key; the installer should recognize it from the board.
