Older Macs could indeed run Nvidia GPUs, such as the one in the 2014 MacBook Pro compatible with macOS Big Sur. However, this is only partially accurate. The specific GPU being used isn't fully supported by macOS, even in High Sierra. I'm unsure if the particular CPU the OP has will function properly, but AMD processors definitely work with macOS. Switching to a Hackintosh would likely result in poor performance, especially on your hardware, and might not even run at all.
