I believe Minecraft doesn't gain much from additional cores. If the game isn't using those extra cores, you'll get the same performance.

For a CPU upgrade, I'd consider a 13th generation model, even at a high SKU like xx600, if it's achievable. Yes, it comes with a price tag, but the overall enhancement is significant, especially in single-thread performance.

8+1 setup without cooling. The top choice here is 13400F; the board will likely cap itself if you push further. It’s not worth it to exceed 13600K or higher since Alder Lake Refresh is available below. If you can get 12400F or 12500 for a lower price, that’s the better option.

13600 could be a challenging cooling challenge compared to your existing 12100f. Think about whether you require a quieter or more efficient CPU cooler for this upgrade. I picked the 13600 since it maintains a 65w TDP similar to the 12400f.
