The 5800x performs decently but the newer models seem to be the main culprits. I own both a 5800x and an i9 10900k. My 5800x draws a maximum of 128 watts, yet the AIO fans are overheating. It creates a hot zone beneath the heat spreader. The i9 10900k starts at 8°C cooler than the 5800x at stock and consumes 220 watts. Because it occupies more room under the heat spreader, cooling is simpler. I use a 360mm AIO on my 5800x, and when playing Odyssey or Origins, it gets very hot. It runs Origins in the mid-60s and has never dropped below that range recently. I opted for a 360mm AIO after reading many similar experiences. I’m considering trying a larger air cooler with two 140mm fans instead of three 120mm ones to reduce noise.

The CPU fan speed is quite high on this chip, especially during those two games. Adjusting the voltage to 1.29375 in Ryzen Master helped reduce noise and made the PC run cooler overall. The spikes back to the 80s in ac origins have disappeared, even though AMD claimed it was safe for the chip to run at 90°C for hours. I’m concerned about these two games being tougher on the CPU compared to new releases in four years. I believe Ubisoft didn’t do a good job with these titles, and Valhalla seems to handle things better.

Consider skipping 5800x due to the heat concern. Opt for 5600x or 5900x instead. The video you watched supports this advice.
