We use a lightweight version of Windows 8 on our tablets at work, which uses just 256MB of RAM. I don’t mind them much, though they still function fine.

That's a SLIM version, that's also on an x86 platform with a lot of crap cut out.

I work well with Windows 8 even on lower specifications, so you should be okay.
