Screen sharing in Minecraft requires a mod (joypad mod). You can also run Gamecube/Wii titles using Dolphin.

Serious Sam 3 BFE offers a splitscreen feature, though it’s the only one I’m familiar with. Many local multiplayer titles aren’t available in splitscreen on Steam. I installed two monitors and was able to run any modded Minecraft. I tested five Tekkit clients alongside a Tekkit server on my I5 with an HD 7950 graphics card. Performance was stable at around 30 frames per second, though only four clients ran smoothly. The main limitation was about 2.5 gigabytes of RAM usage per client.

Consider setting up multiple virtual machines or splitting your PC into smaller units. This approach could help manage resources better. However, you'll need two copies of each game, which isn't ideal. Running in offline mode might be an option, but games usually prefer not to play with duplicates. While it won’t provide the best performance for modern titles, it can work well for older or less demanding games if latency is acceptable.
