Currently I'm using Raspbian on a 3.5-inch touchscreen device that connects via GPIO header. The display resolution is around 320x480, and while it runs smoothly, the interface isn't very intuitive for touch interactions. Are there alternative desktop environments that offer better touch support?

They're not very reliable as touch interfaces. A standard USB touch screen or the Pi's built-in display works far better.
