I recently purchased a Raspberry Pi 3 B+ and was searching for an operating system to install. I already have Raspbian, but it doesn’t perform well with my touchscreen. I’m considering an Android variant, though perhaps there’s a more suitable option. Thanks!

Lineage OS could be exactly what you need. You'll have to install everything manually since it isn't available on the Play Store. The PINN bootloader includes it, though I'm not sure about NOOBS.

I attempted LineageOS, but without my touchscreen functioning, it's essentially not useful for me. The steps in the instructions suggest using a terminal emulator to connect to Raspbian, but I'm unsure if that applies here.

My knowledge is based only on the RPi touchscreen documentation, and that’s quite restricted.
