Don't purchase a console just to play multiplatform games. It's a mistake. Even if the game isn't well optimized, it will still perform better on PC.

Buying now means you’ll get a few extra years or so. In the long run, using SLI could actually boost performance. But if you’re choosing between a high-end GPU that stays sharp for two years or a console with a longer lifespan but lower graphics quality after that, you probably aren’t really into PC gaming. The point is to avoid constantly replacing hardware. If you just want to play and have fun, prioritize graphics quality less. If you care more about visuals but gaming isn’t your main focus, a console might be the better choice.

Avoid making your purchase choice based on any Ubisoft title, since for ACU the "recommended" version is 780. That's... unusual. The port appears to be quite poor; I'd likely pay more than 970 for a 780 instead, given its strong overclocking capabilities and lower power consumption. Plus, it's more affordable.
