The title clearly indicates everything. I started using it on my PC with a GTX 1080, raised the fan speed to 80%. I don’t notice any sound while playing, but I don’t want it running all the time. Is it safe to return it to the default setting after finishing the game?

It wouldn't be okay if you didn't manage the cooling properly. You might want to configure a fan curve in settings so it increases to 80% during gaming and reduces when idle. Usually, I stick to 100% for 80+c on the graph. If you're worried about temperatures (safe up to 85°C), consider placing a fan near the GPU case and switching the default paste to something more efficient (5+ W/M.K).
