When you push the limits, it can cause issues. On the 970, using around 3.7GB of VRAM led to crashes. Reducing some advanced graphics settings brought it back under control. The i7 should handle it, though possibly more RAM is needed—maybe 8GB or even more. Loading times might slow down with your HDD, but performance shouldn’t be too bad.
I thought it best to skip the advanced options since Totalbiscuit mentioned they cause issues, even on his powerful system.
I'm actually running GTA 5 on my friend's account at high settings, and it's maintaining around 30 FPS. I think I might need a better graphics card, or maybe upgrading would help me reach about 60 FPS with maximum settings.

Disable advanced options for smoother performance at 60 FPS. Reduce AA or shadows if needed, or use settings that save VRAM.
