I’ve obtained a dual Xeon E5 2699 v3 and am looking into which Windows Server version would work best for it.
You should be able to operate server 2022 standard, possibly even 2025. I have a Dell r320 with an E5-2470 v2 running 2022 datacenter. To do it properly, you need to license the server by core, and because you're using dual 18-core (36-core) systems, you'll likely need multiple licenses. Alternatively, you can install the server OS without a key and enjoy a 180-day trial period.
What you need from this "server" is that it performs the tasks you require.
Which media server application are you planning to employ? Is every participant connected locally, within your personal network?
Windows 11 operates as a single-user system by default. For scenarios requiring several users logged in at once, a server-based operating system must be utilized.
