It's really frustrating trying to fix this grouping issue. I've adjusted my view settings, but it keeps reverting back to the default grouping. After applying changes and clicking OK, it just restores the date-based folders. I'm worried this might lead to some serious problems.

Windows 11 seems to understand your preferences well. Don't stress about it. Just follow the instructions. Note that technically, this could be a bug. It should retain your settings unless you actively change them.

Explore WinSetView on GitHub. I also disliked the group by feature option, which allowed me to turn it off system-wide. I found the default setting unappealing. https://github.com/LesFerch/WinSetView

Select a different option under "Sort," and the "Group By" will be disregarded.

It's likely the issue stemmed from a file dialog interaction. This is typical for Windows 7 to 11. You might also face problems hitting the 5000 saved views limit or encounter registry corruption affecting those views. WinSetView will fix the display correctly no matter the cause.
