You receive the Windows.old version until you either run Disk Cleanup to delete older releases or endure the short period before you can revert.

Aah so there's only a windows.old for backup purposes. I remember from old days when I once upgraded a major version it literally put my whole pc in windows.old and started fresh, I wanted to avoid that now

Only the latest updates to system files were present, not the entire computer. All documents remain unchanged.
