This morning I opened my laptop and tried to search online. At first, the login page asked for sign in instead of the usual password field. When I clicked that option, a lengthy loading screen appeared, resembling a Windows update. After it finished, I saw a window similar to the one you get when trying to log into Office. I then disconnected my internet to avoid the frustrating interface. Later, I was told I needed an internet connection. What a mind-blowing decision!

It seems there might be an issue, possibly from an ongoing update or action. Businesses sometimes make unexpected changes, but they definitely won’t let you access Windows without an internet connection. Edit: I’d prefer to prevent the initial setup. That would be reasonable. But in reality, locking you out of your important files is hard to believe.

It appears you entered your Windows login into an app without selecting "No, sign into this app only" or checking the box for "Allow my organization to manage my device." This indicates your account is linked via MS. Your password isn’t stored locally. You should log in using your email and password online. After a successful first login, going offline won’t affect access.
