Performance won't vary between gaming modes. Choosing the most affordable option works equally well on desktop and laptop for everyday use.

10 pro offers some level of control over Win 10 updates, while enterprise provides even greater influence. Regarding 7 versus 10, Microsoft is actively working to dominate the 7 version, and it lacks dx12 support, making 10 a more attractive choice. You might need to address Google's data collection efforts from Microsoft or find ways to bypass it.
