I'm thinking about not adding a cooler and wondering which option is more suitable: the 2133mhz 2x16gb or the 2400mhz 2x16gb.

If you need to spend $300 on an experiment we already understand the outcome for, it's fine to proceed.
It would be wiser to simply burn the money, rather than invest time in setting up the CPU.
The RAM issue isn't a concern as long as you're using a Z board and a K CPU; speed will still be supported.
