I have a CX 600, an i5 6400, a GTX 1070, and 8 GB of RAM. I think I won’t be drawing too much power, so I’m wondering if using a CX PSU for a month or two would work fine.

Yes, everything will work out. CX600 isn't a top-tier PSU, but it should get the job done.

the main issue was the poor quality of the PSU, but after some research i feel i should be fine for a few months.

It isn't the best quality, but it should work until you can upgrade.
