If I get a Ryzen 2600 will it bottleneck my RTX 2070? Would it be best to wait for the Ryzen 3600 to avoid the bottleneck?
I'm playing at 1080p 144hz

Do you require the computer immediately? If not, wait for the Ryzen 2 and obtain it when needed. If you need it right away, proceed with this configuration and everything should work.

1. Yes, the Ryzen 5 could be the limiting factor.
2. Hold off until the Ryzen Zen2 is available before purchasing.

There will always be some limitations. Certain games will demand more from your CPU, while others will not. However, I believe the processor and GPU are both adequate.

any PC you assemble tends to have some kind of bottleneck. Choosing a Ryzen 5 2600 works well with a 2070. Just ensure you overclock it to about 4.0 GHz, which will need a good cooler costing around $30 to $45 extra since the stock cooler is poor. Pair it with two sticks of 8GB DDR4-2666 RAM and raise the speed to at least 2800/3000. You can start with faster RAM if you can afford it.
If you don’t intend to overclock either the CPU or RAM, opting for 3000/3200 RAM and a Ryzen 5 2600X would be better—it supports up to 4.2 GHz out of the box, though a better cooler is still recommended.
There’s no point in delaying any of this.

You should generally experience over 144 frames per second on most games, unless they are very new or particularly challenging.
