For instance, a RAM model I desire includes these specifications:
KF556C40BBA-16
• Default (JEDEC): DDR5-4800 CL40-39-39 @1.1V
• XMP Profile #1: DDR5-5600 CL40-40-40 @1.25V
• XMP Profile #2: DDR5-5200 CL40-40-40 @1.25V
• XMP Profile #3: DDR5-4800 CL38-38-38 @1.1V
However, I aim to use it with an AMD motherboard. I understand that by default it will operate at DDR5-4800 CL40-39-39, but... will manually adjusting those settings on my X870 motherboard allow it to function with DDR5-5600 CL40-40-40 @1.25V?

If you buy an XMP RAM, it may or may not function with the same XMP settings you manually set on an AMD motherboard. They could work, but compatibility isn't guaranteed. Check if the RAM appears in the memory QVL of your motherboard. It's recommended to use RAM kits from AMD's E.X.P.O that are advertised for broad compatibility.

You can always use the XMP preset, it works with mine.

The motherboard lists the module in memory compatibility, but only "1" is marked for "memory socket support." This suggests it might not be suitable for dual-channel use with another module.

No, this means it's just one stick, not a set of two or four. It should work with two, though it's not guaranteed. Did you receive them as a pair? If they come from the same kit, their serial numbers should be close together. Using XMP at 5600MHz should make setup simple. If you're doing it by hand, remember that "CL40-40-40 @1.25V" is only a small part of all the settings—many others need to match, so start with XMP and adjust manually for better performance.

Eventually they functioned properly in dual channel (4x32bit sends to cpuz, which I think means dual channel), and I managed to install the XMP profile on my AMD motherboard. I'm confused about why there are both AMD and EXPO profiles if an AMD board can handle XMP profiles.

RAM with EXPO is designed to meet AMD processor ideal specifications, including latencies. XMP is an Intel patent, so AMD introduced its own memory OC standards as EXPO. Manufacturers must pay Intel royalties for using the "XMP" name, which some companies like Asus replicate under their own names such as DOCP, but they essentially serve the same purpose.
