Are there black cables available to purchase separately, or are there other options? Which cables are visible? What would the appearance be if left unchanged? The PSU will remain hidden at the bottom of the case.

Have you considered contacting someone nearby to create a tailored cable set for your project? I usually wrap my own cables with MDPC-X sleeving. On another note, you might contact Coolermaster, providing proof of purchase, to inquire about sending a black cable kit for your PSU. Appearance preferences vary widely depending on personal taste. What looks great to one person might not appeal to another. Ultimately, the choice is yours. Have you considered a build with a black and white theme?
Black and white can actually look great if it's done right. A few years ago, I ordered a backplate for my GPU but the picture on the website was very misleading and the ambient light was making it look like dark grey, but when I received it I realized it was straight white. I was really upset but decided to give it a try anyway and it looked amazing. I replaced the GPU since then but I really miss the backplate.

Those are extension cables. If you get these, DO NOT plug them directly into to the PSU, even if they fit. If you have room to hide the original PSU cables, then yes it should work, but only plug the extensions to the existing PSU cables, not the PSU itself or else you might fry everything.
