My current setup is pretty basic – I’ve got a 1050 Ti graphics card, a Pentium G4560 processor, and only 8GB of RAM. I’m thinking about upgrading both my CPU and graphics card, and I'm particularly looking at the Ryzen 3300x and Ryzen 3600. Right now, I could grab a 3300x with an A320 motherboard for around $210, which seems tempting. I’m a little unsure whether to go ahead with that now or save up for a bit longer. Also, I’m not very experienced with AMD graphics cards, and I've been considering a 1660S.

If this system is for gaming then I would hurry and grab the 3300X, almost same gaming performance as the 3600 at a lower price point. Used mobos are iffy I would stay away honestly but it's up to you, if you're getting it from a reliable source go for it.
1660 Super is good but you're sitting at a 1050ti so even a 1650S is a good upgrade. 1660S is great value for money...

I’m on board with Tioym’s point – the processor is definitely holding your build back, and jumping from a 1050Ti to a 1660 Super wouldn’t be a huge step up, honestly. It would definitely be an improvement over the 1050Ti, but it probably isn’t worth spending that money. I'd suggest sticking with the 3300x and your 1050Ti, and instead investing in an SSD and some RAM – specifically, getting you to 16GB total would make a big difference. Eight gigabytes just isn’t enough these days, especially with how quickly modern games use up memory. Adding an SSD would really speed things up too; it’s one of the most noticeable upgrades you could make for relatively little money.

Yeah, I think I'm just gonna get 16 gb of ram first instead of the 1660

You’ll be able to add RAM down the line, but you can't just pop a top-tier graphics card every single day. It’s a reality, but ultimately it's your call. If I were in your shoes, I’d probably go with 8GB for now and invest more in a solid graphics card, then maybe upgrade to 16GB down the road.
