Certainly, as mentioned earlier, Windows 7 is no longer supported, so it's best to avoid using it. For the server side, you're likely referring to Windows 10, which should be your focus. While domain controllers can work in Windows 10 Pro, I strongly advise against using Windows 7 at all.

A system that restarts itself and applies updates without admin or user input isn't advisable. I recommend using Server 2016 or Server 2019 instead. Regarding the version, for a school setup with free user accounts included in Essentials, the 25 CALs likely won't suffice—opt for at least a Standard license. Avoid older versions like Server 2008 or 2012.

2016 or 2019 servers would contain the domain roles you need. Windows 7 isn't supported, so organizations shouldn't keep using it.

There is no Windows 10 Server available, and you cannot configure a domain controller on Windows 10 Pro. You should use Windows Server 2019 instead, as it's more current and stable. Also, consider avoiding Windows 7 for better performance and security.
