Preparing to switch from my R5 1600+ 1060 3gb next week. Intending to utilize the upcoming model for 2-3 years at 1080p or 1440p. Motherboard model is a Gigabyte ab350m Gaming 3 rev1x.

Include the age of the PSU along with its make and model. BIOS version for your motherboard at this time.
At face value, excluding PSU degradation and budget constraints, I recommend the Ryzen 5 5600/6750XT build. Avoid recycling the motherboard; you might also need a subpar RAM kit given your B350 chipset board.

Which PSU do you have?
I wouldn't be able to go for the 7800xt.
I think I'd opt for something like 5600 plus 6750xt since the gap isn't huge.

I'll also be installing a new 750w PSU.
It won't be without removing the CPU.
The price gap is about $120 between 6750, 7700, and 7800 in my country.

If you decide on a Ryzen 3600 or 5500, I wouldn’t be too concerned about changing the B350 motherboard. I’ve actually used a 5900x for a while now.
On a tighter budget, I’d opt for the 3600 or 5500 with a better GPU. You probably won’t notice much difference between PCIe 3 and 4, and even if you do, it’s unlikely to give enough CPU boost to justify a new board. So I think it makes more sense to choose a slightly cheaper CPU and upgrade the GPU—most games will still be your main concern.
Most of what I’ve seen suggests PCIe 3 is only marginally slower than PCIe 4, but not enough to notice a big jump in performance for most situations.
