I enjoy Dirt Rally a lot. I'm new to racing and not very skilled, but the physics are really appealing. My car reacts quite differently on each track.

For driving freedom, "Need for Speed: Most Wanted 2012" is a top pick. If you enjoy rallying, try "Dirt(3)". For realism, "Forza" is great. "Project Cars" is another solid option—still not tried on my end.
