I'm working on upgrading to an i7 8700k with the cryorig h5 universal air cooler. Will it keep the processor cool and allow overclocking? I'm also considering an AIO unit for a potential 5.0 GHz overclock.

At 5ghz the h5 will face challenges. You'll need high-performance options such as the NZXT Kraken, Corsair h115/h150i, Arctic Liquid Freezer, and Fractal Design Celsius.

It supports light overclocking up to 4.2-4.5ghz or similar. Going beyond that may cause instability, especially not at 5ghz.

I own a Corsair H150i Pro that has performed excellently with my overclocked 8700K, maintaining stability while remaining quiet even at 5GHz. Any suitable 280mm or 360mm AIO would handle keeping the 8700K within optimal temperatures during overclocking at that frequency?

It supports light overclocking up to around 4.2-4.5ghz, but beyond that stability may be compromised, especially at 5ghz.
